Rise 'n Shine French Toast

Checked my email a few days ago and received an email from Kraft. Included in the mail was this yummy recipe that I just had to share. Quick, easy and healthy are the three attributes all of my recipes have to have to be a winner and this satisfies it all.

Rise 'n Shine French Toast

Ingredients

3 eggs
1/2 cupmilk
1/4 cupKraft Smooth Peanut Butter
2 Tbsp.sugar
1/4 tsp. ground cinnamon
4 slices thick white bread
1 Tbsp.oil
2 cups fresh strawberries, sliced
2 bananas, sliced
 

Preparation

BLEND first 5 ingredients in blender until smooth; pour into shallow dish. 
    
DIP bread, 1 at a time, in egg mixture, turning to evenly moisten both sides of each slice.     
 
HEAT oil in large nonstick skillet on medium heat. Add bread, in batches; cook 2 to 3 min. on each side or until golden brown on both sides. Serve topped with fruit with or without maple syrup.    
 
Amazingly enough, this recipe can be made ahead the night before. Soak the bread slices in the egg mixture and refrigerate overnight. Next morning just cook and serve as directed.
