Italian Grilled Cheese Sandwich

I'm always looking for new ways to create classic meals. Here is a twist to a classic, easy and fast go to meal that I am sure every parent has mastered - the grilled cheese sandwich. If your kids are anything like my daughter Samantha, grilled cheese sandwiches are a staple in her diet. So when I came across this recipe I just had to share it.

Compliments of Stefano Faita from In the Kitchen, weekdays at 3:30 on CBC, this yummy, heavenly, fit for a king Italian fried cheese sandwich has a delicious mozzarella centre that will leave your family wanting more!

Italian Grilled Cheese Sandwich



INGREDIENTS

9 ounces fresh mozzarella
8 slices of white sandwich bread or egg bread, crusts removed
2 tbsp. to 3 tbsp. sundried tomato spread
3 eggs
1/2 cup milk
Salt and freshly ground pepper, to taste
Flour, for coating the sandwich
Olive oil, for frying
8 cups mixed greens, for salad
Extra virgin olive oil, for salad
Balsamic vinegar, for salad

PREPARATION
Cut the mozzarella into 4 slices.

Add sundried tomato spread on 4 slices of bread, don’t spread all the way to the edges, leave about a 1/4 inch border.

Assemble sandwiches with 1 slice of bread, 1 slice of mozzarella and 1 slice of bread with sundried tomato spread.

Press down on the sandwich with your hands, sealing the edges of the bread together.

In a bowl, whisk together the eggs and the milk, salt and pepper. Dredge each sandwich in flour, shaking off any excess. Dip each sandwich into the egg mixture.

Pour enough oil to come at least 1/2-inch up the sides of a heavy bottomed fry pan. Heat oil over medium heat. When oil is hot, fry the sandwiches until they are golden brown on both sides, and cheese melts, about 1 to 1 1/2 minutes per side. If needed, pop sandwiches in a 400 degree F. oven to melt the cheese thoroughly.

Serve the sandwich with a mixed greens, dressed with olive oil and balsamic vinegar and seasoned with salt and pepper.

You could serve this sandwich with your favourite type of salad. One of my favourites lately have been a raspberry infused balsamic vinaigrette because of its fresh and zesty flavour.
