Chili Time!!

If anyone out there is from Toronto, you know that we are going through a deep freeze. The type of freeze where the streets are white and your first step outside leaves you a bit breathless.

These conditions call for drastic measures......bring out the pots for some good old comfort food - Chili. If anyone is looking for a comforting, healthy and yummy dinner idea try the Savy Suburban Mom's Ohh so good Chili. It's truly a family favorite.




Ohh So Good Chili

Ingredients

1lb lean ground beef
1 medium onion (sliced thinly)
1 can (540 ml) red kidney beans
1 red pepper (diced)
1 green pepper (diced)
1 can (740ml) whole tomatoes undrained
1/2 jar (300ml) ready made tomato and basil sauce
1 teaspoon garlic powder
2 cloves of garlic (crushed)
salt
black pepper
tsp oregano
3 tbsp Extra Virgin Olive Oil (EVOO)
shredded cheddar cheese
sour cream

Preparation

Brown meat on medium heat in 1 tbsp of EVOO. Add onions, red and green peppers, pinch of salt and pepper, garlic powder and the remaining amount of EVOO. Sautee for 10 minutes.

Add beans, tomatoes, tomato sauce, crushed garlic, oregano, pinch of salt and pepper. Reduce heat to low. Stir, cover and simmer for 1.5 hour.

Sprinkle 1 tbsp of cheddar cheese onto the bottom of soup bowls. Pour in chili and top with a sprinkling of cheddar cheese.

Garnish each chili bowl with a dollop of sour cream.

Serve with a fresh dinner roll or ciabatta bun.

* This recipe freezes great! Make it once serve it twice!!
